    Italian Turkey Burgers


    • 4 whole wheat hamburger buns
    • Olive oil-flavored cooking spray
    • 1 garlic clove, halved
    • 1 lb. ground turkey
    • 1/2 cup tomato and basil pasta sauce
    • 1/3 cup finely chopped onion
    • 1/4 cup Italian-seasoned breadcrumbs
    • 1/4 cup grated fresh Parmesan cheese
    • 1 tbsp. chopped fresh parsley
    • 2 presliced part-skim mozzarella chesse slices, cut in half


    Lightly coat cut sides of buns with cooking spray.  Place buns, cut side up on a broiler pan.  Broil 2 minutes or until lightly toasted.  Rub garlic evenly over cut sides of buns.  Discard garlic; set buns aside.  Combine turkey, and next 5 ingredients in a bowl; stir well.  Shape mixture into 4 (1/2 inch thick) patties. Place on broiler pan; broil 7 minutes on each side or until done.  Place patties on bottom halves of buns; top each with 1/2 cheese slice, and broil 1 minute until cheese melts.  Cover with tops of buns.  Serve with Sweet Potato Fries and a salad.




    Sweet Potato Fries


    • 2 medium sweet potatoes
    • 1 1/2 tbsp. canola oil
    • 1 tsp. dry mustard
    • 1 tsp. paprika
    • 1/2 tsp. thyme (dried)
    • 1/2 tsp. salt
    • 1/2 tsp. Tabasco sauce


    Preheat oven to 450 degrees F.  Scrub potatoes and cut into 1/4 inch to 1/2 inch thick sticks.  Mix spices and oil together.  Put the potatoes in the bowl and toss with oil mixture.  Arrange on baking sheet and bake 35-40 minutes.



    Sweet potatoes are usually available in Texas August–May.



    Watermelon Banana Split


    • 2 bananas
    • 1 medium watermelon
    • 1 cup fresh blueberries
    • 1 cup diced fresh pineapple
    • 1 cup sliced fresh strawberries
    • 1/4 cup caramel fruit dip (light)
    • 2 oz sliced & roasted almonds


    Peel bananas and cut in half lengthwise, then cut each piece in half.  For each serving, lay 2 banana pieces against sides of shallow dish.  Use an ice cream scooper, place three watermelon “scoops” in between each banana in dish. Remove seeds if necessary.  Top each watermelon “scoop” with a different fruit topping.  Drizzle caramel fruit dip over all.  Sprinkle with almonds.



    Watermelon is usually available in Texas May–November.  Blueberries are usually available in Texas May–July.
