    Breakfast Tortillas

    • 6 large eggs 
    • 1/2 cup low-fat milk 
    • 1/2 lb. ground turkey 
    • 6 flour whole wheat tortillas
    • 1 cup salsa 
    • 1/4 cup Monterey Jack cheese, grated


    In a mixing bowl, blend eggs and milk with wire whisk or fork.  Set egg mixture aside. In a large skillet over medium heat, coat skillet with cooking spray, cook ground turkey until fully cooked. Remove turkey and set aside. Drain the grease from skillet. Add egg mixture to the skillet. Cook on low to medium heat until fully cooked.  Wrap tortillas in aluminum foil and warm in the oven at 450 degrees for 3-5 minutes. Remove tortillas from oven.  Take a tortilla and set it down flat on a plate. Spoon eggs and meat in the middle of a tortilla, add salsa and cheese.  Wrap both sides of the tortilla inward and then roll it up from the bottom.   
    Makes 6 servings.


    Breakfast Fruit Medley


    • 3 medium apples, cored and chopped
    • 2 medium pears, sliced
    • 1 orange, peeled, sectioned and sliced
    • 5 ounces frozen strawberries, thawed and drained (optional)
    • 1/3 cup orange juice

    In a bowl, stir together the apples, pears and orange.  Gently stir in strawberries if using.  Pour in the orange juice, stirring gently.   Serve or cover and refrigerate for up to an hour.

    Makes   6-1/2 cup servings.
